Ingredients
For the Salad
3 large heirloom tomatoes, sliced into 1/4-inch thick rounds
16 oz fresh mozzarella cheese, sliced into 1/4-inch thick rounds
10-16 large fresh basil leaves
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 cup extra virgin olive oil (you may not use all of it)
For the Balsamic Reduction
1 cup balsamic vinegar
2 tablespoons honey or sugar
Instructions
Prepare the Balsamic Reduction
Make the Reduction: In a small saucepan, bring the balsamic vinegar to a boil over medium-high heat. Add the honey or sugar and stir to dissolve. Reduce the heat to medium and simmer, stirring occasionally, until the vinegar is reduced by half and has a syrupy consistency (about 15-20 minutes). Remove from heat and let cool.
Assemble the Salad
Slice and Arrange: On a large platter, alternate slices of tomato and mozzarella. Tuck fresh basil leaves between the slices.
Season and Drizzle: Sprinkle sea salt and freshly ground black pepper over the top. Drizzle with extra virgin olive oil and the cooled balsamic reduction.
