Baked Salmon with Carrot, Zucchini, and Spinach Slaw

Ingredients

  • For the Salmon:

    • 1.5 pounds salmon fillets, skin on or off

    • 2 tablespoons olive oil

    • 1 lemon, thinly sliced

    • 3 cloves garlic, minced

    • Salt and pepper to taste

  • For the Spinach Slaw:

    • 3 cups fresh spinach, chopped

    • 1 cup shredded carrots

    • 1 cup shredded zucchini

    • 1/4 cup red onion, thinly sliced

    • 1/4 cup olive oil

    • 2 tablespoons apple cider vinegar

    • 1 tablespoon honey

    • Salt and pepper to taste

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).

  2. Prepare the Salmon:

    • Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, top with lemon slices, minced garlic, salt, and pepper.

  3. Bake:

    • Bake in the preheated oven for 20-25 minutes, or until the salmon flakes easily with a fork and the vegetables are tender and slightly caramelized.

  4. Prepare the Spinach Slaw:

    • In a large bowl, combine the chopped spinach, shredded carrots, shredded zucchini, and red onion.

    • In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper. Pour over the spinach mixture and toss to coat evenly.

  5. Serve:

    • Serve the baked salmon with a side of fresh spinach slaw.
