Baked Salmon with Carrot, Zucchini, and Spinach Slaw
Ingredients
For the Salmon:
1.5 pounds salmon fillets, skin on or off
2 tablespoons olive oil
1 lemon, thinly sliced
3 cloves garlic, minced
Salt and pepper to taste
For the Spinach Slaw:
3 cups fresh spinach, chopped
1 cup shredded carrots
1 cup shredded zucchini
1/4 cup red onion, thinly sliced
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey
Salt and pepper to taste
Instructions
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Salmon:
Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, top with lemon slices, minced garlic, salt, and pepper.
Bake:
Bake in the preheated oven for 20-25 minutes, or until the salmon flakes easily with a fork and the vegetables are tender and slightly caramelized.
Prepare the Spinach Slaw:
